Trained in Germany's Black Forest, Nina developed a deep appreciation for technique, seasonality, and the relationship between food and place. Those early influences continue to shape her approach today, balancing classical foundations with curiosity and a desire to keep learning.
That same curiosity led her to create Nina's Culinary Travel, a multi-year dinner series exploring regional cuisines from across Europe. Each event focused on a different destination, combining authentic ingredients, local traditions, and storytelling to give guests a deeper understanding of the people and culture behind the food. The series became an ongoing study of how recipes evolve, migrate, and connect communities across borders.
For this edition of Lab Notes, Nina used Rendr Lab as a creative starting point, exploring new flavor combinations before interpreting the concept through her own experience and culinary perspective. The final dish reflects her belief that inspiration is only the beginning—the chef's judgment, technique, and intuition are what ultimately bring an idea to life.
Most mornings begin with a notebook and a cup of coffee. By afternoon, the pages are filled with ingredient pairings, sketches, and crossed-out ideas that gradually find their way to the plate. She believes every memorable dish starts long before the first ingredient reaches the pan.
"You don't chase originality," Nina says. "You stay curious long enough for it to find you."
Her work reflects a simple belief: great food is more than technique. It's the result of observation, culture, experimentation, and the courage to keep refining an idea until it feels unmistakably your own.
